Gideon’s Bakehouse built its August 2026 menu around peanut butter and espresso, led by a new Peanut Butter Cold Brew Cookie. The gothic Orlando bakery, known for oversized cookies and a new limited flavor every month, is running the lineup at both of its locations, East End Market and Disney Springs, through August.

The peanut butter push leads, but the month also brings a matching cake, a returning cold brew, a new weekend-only cookie, and a fresh run of the bakery’s collectible merch.

The Peanut Butter Cold Brew Cookie

The Peanut Butter Cold Brew Cookie costs $6.50. Gideon’s describes it as a peanut butter cookie laced with freshly ground, locally roasted decaf espresso and “fully covered in chopped Reese’s Peanut Butter Cups and Reese’s Pieces.” The bakery calls it a nearly half-pound cookie, and the espresso is decaf, there for the flavor rather than the caffeine. It is available at both locations for the month of August, with a limit of two per person.

The Peanut Butter Cold Brew Cake

The same flavor comes in cake form. Gideon’s describes the Peanut Butter Cold Brew Cake as a double-frosted cake with “three layers of our super soft Chocolate Cake with a full layer of our addicting Peanut Butter Buttercream and our Mocha Espresso Buttercream,” finished with Reese’s Pieces and peanut butter cups. It is sold by the slice at both locations on Wednesdays and Saturdays this month, with a limit of two per person. A whole cake is available as a preorder for $98 at the East End Market location only, for local pickup with at least three days’ notice, through August.

Stuart’s Orange Mocha Nitro Cold Brew

Gideon’s is holding its Stuart’s Orange Mocha Nitro Cold Brew for another month, this time only at the Disney Springs location. The bakery has not published a price for it.

The Oreo Double Stuffed Sugar Cookie

Outside the peanut butter theme, Gideon’s is launching an Oreo Double Stuffed Sugar Cookie on select weekend days. The bakery describes it as “a rich Chocolate Dough made with Black Cocoa Ganache stuffed with a chunk of Cookies & Cream White Chocolate Faux Fudge and covered in crunchy Sanding Sugar.” It is available at both locations on August 8, 9, 15, and 16 only, first come first serve, with no preorders and a limit of two per person while supplies last. It is one more entry in a busy year of novelty Oreo tie-ins.

Gideon’s is a clean example of a pattern HAN has tracked all year. Our treatonomics reporting found that guests want memorable, not cheap, and Gideon’s model is exactly that: a $6.50 half-pound cookie people line up for, a flavor that exists for one month and then disappears, and collectible merch tied to the same drop. The monthly-limited format runs on anticipation, the same lever behind the Hershey seasonal report.

The August merch and the collectible menu

The drop comes with the month’s collectible items, tied to the bakery’s cast of characters. August brings a Gilbert Morsels collectible pin, a returning “By the Beautiful Sea” candle in a blue glass vessel, hot pink and blood red Gideon’s bat tumblers, a chrome gargoyle magnet sold online only, a red gargoyle V-neck shirt, and a red and black folding fan. The bakery has also teased weekend treats and a possible secret slice through the rest of the month.

Where and when to get it

Everything runs through August at Gideon’s Bakehouse, with the Peanut Butter Cold Brew Cookie and the cake-by-the-slice at both East End Market and Disney Springs, the whole-cake preorder and the online cookie pickup at East End Market, and Stuart’s Orange Mocha Nitro Cold Brew at Disney Springs. The Peanut Butter Cold Brew Cookie is $6.50 and the whole Peanut Butter Cold Brew Cake is $98.
