While much of the coffee world turns to pumpkin spice this time of year, Philz Coffee is going a different direction. The California-founded chain’s 2026 fall menu launched August 18 with two new cold brews, Apple Cinnamon Roll and Pecan Pie, plus seasonal pastries. It is a limited-time menu, available while supplies last at all 80-plus Philz locations in California and Chicago.

More Than Pumpkin
“Every fall, it feels like pumpkin spice shows up just about everywhere. Here at Philz Coffee, we’ve always done things a little differently. This year, we looked to classic and beloved fall flavors. They’re familiar and nostalgic, yet not something our customers can get everywhere else,” Andy Mai, Philz Coffee’s chief business officer, said.
The Two New Cold Brews
Both new drinks are cold brews. The Apple Cinnamon Roll is “cold brew swirled with caramel apple butter, Ghirardelli Vanilla Sauce, and cinnamon for a warm, bright and balanced beverage.” The Pecan Pie is “cold brew layered with buttery pecan toffee, cinnamon, and finished with a sprinkle of sea salt for a rich, sweet and savory sip inspired by a favorite fall dessert.”
Pastries, With a Little Pumpkin
Philz is also adding seasonal pastries that vary by market, including regional favorites and returning classics, plus “a little bit of pumpkin.” Listed examples include a Cinnamon Maple Morning Bun, an Apple Cinnamon Danish, and Pumpkin Bread.

The fall menu launched August 18 and runs while supplies last. It is available at all 80-plus Philz locations in California and Chicago, in-store and to order ahead through the Philz app, philzcoffee.com, DoorDash, and Uber Eats. Drinks are made to order with Philz’s pour-over method, and sweetness and milk can be customized at no extra charge.
A Fall Season Split Between Pumpkin and Everything Else
Philz stands out in a fall season otherwise full of pumpkin. HAN has tracked this year’s wave, from Einstein Bros.’ returning Pumpkin Bagel to Starbucks’ Pumpkin Spice Latte, Krispy Kreme’s fall collection, IHOP’s pumpkin pancakes, and Peet’s fall menu.
